Liquid Hydrogen and Liquid Oxygen for the Shuttles main engines and solid rocket fuel for the boosters. Combine that with thrust vectoring both on the Shuttle and the solid rocket boosters and you can pin-point your target in space.

No, it isn't said. There is a water suppression system that is in place under the main engines to prevent damage to the orbiter and there is a water suppression system that floods the area after liftoff to prevent damage to the pad. The smoke is smoke and there is a little bit of steam mixed in there.
